There's an art to a truly great cup of tea — and once you've mastered it, you'll never look back.
The Leaves Matter Most
Every perfect cup begins with quality tea. Whether you prefer a bold Assam, a delicate green, or a fragrant Earl Grey, always choose loose leaf over bags where possible. Loose leaf tea retains more of its essential oils and flavour compounds, giving you a richer, more complex brew.
Water: The Unsung Hero
The quality and temperature of your water can make or break your cup.
- Black tea: 95–100°C (just off the boil)
- Green tea: 70–80°C (let the kettle rest for a minute or two)
- White tea: 75–85°C
- Herbal & fruit infusions: 100°C (full boil)
Always use fresh, filtered water if possible — re-boiled water loses oxygen and can make tea taste flat.
The Golden Ratio
A good rule of thumb is 1 teaspoon of loose leaf tea per 200ml of water. Adjust to taste — some teas, like oolongs, reward a more generous measure.
Steeping Time
Patience is everything. Over-steeping leads to bitterness; under-steeping leaves you with weak, watery tea.
- Black tea: 3–5 minutes
- Green tea: 2–3 minutes
- White tea: 4–5 minutes
- Oolong: 3–5 minutes
- Herbal infusions: 5–7 minutes
Use a timer — it makes a real difference.
The Vessel
Warm your teapot or cup before brewing by rinsing it with hot water. A cold vessel drops the temperature of your brew immediately, affecting the extraction. A quality ceramic or cast iron teapot retains heat beautifully and elevates the whole ritual.
Milk, Sugar & Beyond
This is where personal preference reigns supreme. If you take milk in black tea, add it after pouring to better judge the strength. For green and white teas, skip the milk entirely and let the natural flavours shine. A slice of lemon, a spoonful of honey, or even a pinch of cardamom can transform a simple brew into something extraordinary.
The Final Touch: Slow Down
The perfect cup of tea isn't just about technique — it's about the moment. Take a breath, wrap your hands around your cup, and savour it. Tea has been a ritual of comfort and connection for thousands of years. You're part of that tradition.
